Three Japanese met while attending university in Taiwan and later opened up Jamling Cafe, which makes delicious Japanese souffle pancakes (sweet and savory), has yummy smoothies, and surprisingly makes a pretty good latte and flavored lattes. I’ve tried almost everything on their menu over many visits and enjoyed everything that I ate and drank.

Some of you might be asking what are souffle pancakes. The ingredients for souffle pancakes are similar to regular pancakes, but they’re prepared differently in order to make them airier, softer, and thicker. How the eggs are prepared is the trick to making a great souffle pancake. Egg yolks and egg whites are separated, and the whites are beaten to make meringue (like how you would make souffles or chiffon cakes). The egg whites are beaten until stiff peaks form, and then are folded gently and carefully into the rest of the batter. The souffle pancakes are extra fluffy because the air bubbles hold their shape inside the pancake batter. As a result, the pancakes are super airy, like souffle.

In recent years, Japan pastry shops and cafes have been in a race to make the fluffiest, softest pancake. By 2016, the pancake craze in Japan was in full swing with pancake shops opening all over the country, competing for the best souffle pancakes. Here are three of the most famous: Kiln-baked Souffle Pancakes (窯焼きスフレパンケーキ) at Hoshino Coffee, Miracle Pancakes (奇跡のパンケーキ) at Flippers, and Happy Pancake (幸せのパンケーキ) at A Happy Pancake. I’ve never eaten souffle pancakes in Japan, but I’m pretty sure it’s safe to say that Jamling’s pancakes are legit.

Jamling Cafe can get quite busy on weekends, so it’s best to make a reservation to insure you secure a seat.

At the time of this review, Jamling Cafe has a location in Taipei, one in Taichung, and one in Kaohsiung.
