Yamaarashi is a Sapporo-based Japanese ramen shop. They opened up a location in Taipei in 2017. It's a small little place with a basic, single row for seating. You don't go there for decor, you go their for their delicious ramen. You first order your ramen choice on a machine outside and wait to be seated if there's a queue. The machine's menu is only written in Chinese and Japanese, but not to worry, I translated it into English for you in the photo section below. Also, the staff is very helpful and will assist you with the machine if you need it (and you may need it because I didn't cover the option of adding other elements to your ramen that isn't on the main menu: like an egg). I've also attached a video below where Alice will show you what buttons to press to order ramen quantity and confirm your order.
The special thing about this ramen shop is that they integrate pork fat into the broth; the result is: adds a richness to the overall taste, gives it a creaminess, makes the broth slightly thick, and bestows upon the ramen a nuance of flavors. Their broth is thicker than any other ramen shops' that I've tried in Taipei. (With the one exception of Takaryu Ramen 鷹流らーめん, which has ultra thick broth, almost like turning ramen into a whole different dish. Some people may love it, others may not.) Yamaarashi's thicker broth isn't too thick, so anyone who likes ramen will be sure to like it.
They concentrate their efforts on specializing in three ramen choices: tonkotsu (pork bone), spicy, and soy sauce. I tried all three and thought they were all delicious. Their spicy ramen had a perfect level of spiciness; I could also taste other flavor elements in the broth other than just my mouth glowing. Their tonkotsu (pork bone) ramen was fairly thick and quite creamy. Its broth's flavor was perfectly rich and flavorful. Their soy sauce ramen was fairly thick and creamy. It possessed a perfect level of saltiness, and contained some other flavor elements. I enjoyed all three of their ramen choices till the last bite, especially their soy sauce and tonkotsu ramen.
If you ever wondered what was up with the partially hard-boiled eggs used in ramen, here's a rundown. Ramen eggs are a bit unique: they are soft boiled with the egg yolk never being fully cooked. The egg yolk can be runny, or it can be custard-like with firm texture; it depending on the ramen shops' chef and their preferences of taste. In Japan, they're called Ajitsuke Tamago (味付け玉子) or Nitamago (煮玉子), or Soy Sauce Marinated Eggs in English.
