Totto Ramen 鳥人拉麵 is a unique ramen restaurant in many ways. Their first location was opened up in New York City in 2010. The Japanese ramen chef wanted to make a unique ramen that was authentically Japanese and also catered towards Americans. Unlike other ramen restaurants, Totto Ramen's broth is made up from chicken bones and contains no pork. Each ramen choice on the menu -- except for the vegetarian option -- has the word "Paitan" in it. Paitan means white warm water. They put a bag of white rice in the simmering chicken bone broth to add flavor, creaminess, thickness, and give the broth a white color. Their ramen dishes do include pork slices, but you can substitute them for chicken slices, making the whole dish pork-free. So if you don't eat pork but have always wanted to try ramen, now you have your chance, and Totto Ramen just doesn't churn out just any chicken ramen, but the best that I've ever had: Spicy Miso Paitan (NT$230). Totto also has a ramen dish for vegetarians, which is very unique for ramen restaurants. If you do eat pork, I'll say that their pork slices are the best that I've ever had in Taiwan. They're seared to perfection right before entering your ramen bowl, are very tender, juicy, and completely flavorful -- at least that's how they were on five of my six visits.
Totto Ramen is considered one of the top 5 ramen restaurants in New York City by many top food reviewers. Even Japanese food reviews who have ventured to NYC to try Totto Ramen had nothing but great things to say about it.
At the time of this review, Totto Ramen has five locations: three in New York City, two in Massachusetts (one in Boston and one in Somerville), and one in Taipei. The Taipei location is small and cramped and is more geared towards eating and leaving, as opposed to a place where you'd stretch out your restaurant visit chatting, which is fine because ramen shops are traditionally like this. The outside waiting list sheet at the Taipei location also helps to streamline the waiting time and is hassle-free.
Let me just add that it's very stupid that Totto has a 10% service charge when there is no service needed; it's highly irregular for a ramen restaurant.
Vegetarian options: It's super rare for a ramen restaurant to have a ramen option for vegetarians! Vegetable Ramen (NT$250) and Spicy Vegetable Ramen (NT$250).
