I've eaten at tons of ramen shops in Japan and Taiwan and have never had a ramen like Takaryu Ramen 鷹流らーめん before. They're a Tokyo-based ramen shop that opened up a location in Taipei. The thing that sets them apart from other ramen shops is their thick ramen broth; their broth can best be described as calling it a fatty gravy instead of a liquid. Think of its consistency as akin to turkey gravy that gets ladled over mashed potatoes during Thanksgiving. One of the items that Takaryu uses that's unique for ramen broth is chicken's feet being added to the broth's simmering process, which can be detected in the taste of their broth if you're familiar with the taste. Please don't get grossed out by this, though, because I don't particularly like chicken's feet -- I've had it at night markets -- but still thought it combined very nicely with the other broth ingredients. Because their broth is so fatty and thick, it's very filling, especially when combined with the wheat ramen. I can eat a lot, but even I felt very full after eating their large bowl of ramen.
Like many other ramen shops, you can choose the proportion of ramen (noodles) that you want at the same price. At Takaryu, a large amount of ramen is 300g, medium is 230g, and small is 150g. Then you choose between their regular-sized ramen or a slightly thinner ramen. Japanese ramen aficionados claim that slurping ramen enhances the flavor a bit, and if you've ever eaten at a ramen shop in Japan, you'll find the whole shop filled with slurping sounds because that's how you're suppose to eat it -- it isn't rude or weird. Trust me, I first visited Japan with my Japanese girlfriend at the time and was shocked to find out that slurping up ramen in Japan was not only accepted, but was how you're supposed to eat ramen. I think most Taiwanese already know this, but not all of them, because sometimes I still get weird looks from locals when I'm properly eating my ramen...or maybe they're just surprised that I'm a slurping pro -- I'm not sure.
As with other ramen shops, they specialize in a small selection of ramen choices. You can choose from Salt & Soy Sauce, Tonkotsu (pork bone) & Soy Sauce, Special Condensed Tonkotsu rich in seafood and onions served on the side of the ramen for dipping purposes (more deeply explained in the picture section below under the dish), a special Hiyashi Tsukemen I call Cold Miso Salad Ramen (fully explained in the picture section below), and Spicy Tonkotsu that's only available during wintertime. Of course, there is chili oil as a side condiment on each table so spicy-lovers can make any ramen broth selection spicy. Then of course there are appetizers and side items that can be accompanied with your ramen, but if you're not sharing one of them with at least two other people, I'd stick to just a ramen order since their broth is so filling -- unless you go for the small proportion of ramen (150g) and you have stomach room for other food items. My friend and I both ordered a large amount of ramen (300g) and shared two side items on our first visit. Needless to say, we learned our lesson at the end of the meal and left Takaryu stuffed to the brim. However, both side items (steamed chicken with sesame sauce and barbecued pork rice) were delicious.

Vegetarian options: As with most ramen places, the broth contains pork and/or seafood; authentic ramen doesn't cater to vegetarians.
