Saboten tied with Anzu as my second favorite tonkatsu place in Taipei. Katsusei is still my favorite tonkatsu place in Taipei.
When most people visit a tonkatsu place, they wonder what the difference between fillet and loin tonkatsu is. If you ask the staff, they will tell you a different thing every time and contradict each other all the time. Believe me, I've tried it at many different tonkatsu restaurants and even at the same brand at different locations. So let me break it down for you so you don't have to listen to the staff's incompetent words that fly out of their mouths. Tonkatsu places in Taipei do a horrible job at teaching their staff. Fillet and loin are different cuts of meat, both are quality. First off, Fillet is the UK term for tenderloin in the USA. So pork fillet and tenderloin is the same thing. Tenderloin is a tenderer cut of meat than loin. However, when you deep-dry meat, as they do to make tonkatsu, the difference in tenderness is basically lost and they end up having the same tenderness. Loin is a cut of meat that has fat on it. So since the deep-frying nullifies the tenderness comparing, their loin cut ends up being more tender because fat is tender. This is probably the reason why the staff will give you a different answer every time. Whether you should order fillet/tenderloin or loin tonkatsu boils down to one question: Do you like fat on your meat? If you do, order loin, as I do. If you don't, order the fillet/tenderloin tonkatsu.
Saboten, like almost all tonkatsu restaurants, gives you all-you-can-eat shredded cabbage. I (and whomever I'm dining with) will usually get two refills of shredded cabbage because Japanese dressing is so tasty. I think the Japanese make the best salad dressing in the world. I particularly like their miso dressing. I also like how Saboten gives you a complimentary vinegar drink after your meal to help with digestion.
