Menya Itto is one of the top ranked ramen restaurants in Japan. Taiwan is fortunate that Itto opened up a location in Taipei. Itto is known for having one of the best tsukemen (dipping noodles). Their one ramen choice that is tsukemen is a fish tsukemen, it's the recommended ramen on their menu. I've had tsukemen in Japan, and can agree that Itto's fish tsukemen was one of the best that I've ever had.
Besides the one tsukemen choice, Itto has three ramen choices, all of which I found delicious: Fish & Chicken Bone Ramen, Pork & Chicken Bone Ramen, and Chicken Bone Ramen. Itto's meat slices are different that most ramen shops' pork slices: Itto's meat slices aren't roasted, instead they taste like they're slow boiled, so the chicken and pork slices that come with every ramen dish are very tender and go really well with Itto's broth, which is more on the lighter side. Think of a lighter broth that's infused with a subtle mix of flavors that work perfectly together and leave you feeling relaxed and completely content at the end of the meal, instead of leaving you with a powerful salt or tonkotsu flavor that at times might be overbearing toward the end of your meal. However, if you prefer powerful ramen, Itto might not be your favorite ramen choice, but even two of my friends on different visits who fell into this preference area, still were content with their Itto visit. This conveys how good Itto is.
There are a few more things I need to convey about Itto. First, Itto's noodles are some of the best that I've ever had. Secondly, their ajitama (boiled egg soaked in soy sauce) can be ordered as normal or infused with brandy in a non-sliced egg -- they'll ask you which one you want during the ordering process. I like brandy and ajitama, but it was too weird for me, I'll keep them separate from now on. Thirdly, their donburi (rice bowl) options aren't all available, each day depends on what's available. Lastly, keeping in tradition with their first ramen shop in Japan, females get a free scoop of ice cream for dessert. This was originally supposed to encourage females to give ramen a try; at one point in Japan, ramen was mostly a male-desired meal. Itto also has rubber band hair ties to help keep long hair away from your ramen.

The master teaches the student how to eat ramen in the Japanese movie "Tampopo." Keep in mind that it's a comedy and shouldn't be taken literally, especially since the master bites his noodles.
