Ebisoba first opened in Sapporo in June of 2010. Sapporo, capital of the mountainous northern Japanese island of Hokkaido, is famous for its beer, skiing, and an annual snow festival featuring enormous ice sculptures. Ebisoba claims to be the best ramen restaurant in Hokkaido (what restaurant doesn't claim to be the best?). Then they opened up a second location at the Ramen Town in the Chitose airport a month later. Later they opened up some locations in Tokyo. On September 9, 2015, Ebisoba opened up a location in Taipei in the neo19 building in the Xinyi District, where I have dined on more than one occasion.
Ebisoba (shrimp ramen) adds boiled shrimp heads from Hokkaido to its broth. I don't know of any other ramen restaurant that does this. You can choose three different types of broth: Original, a broth with solely the full flavor of shrimp; Moderate, a pork bone and shrimp broth with a moderate flavor for those who don't like very salty and rich flavors that are common for Japanese ramen; and Rich Flavor, a pork bone and shrimp broth with a rich flavor, which is normal for Japanese ramen (not as rich as Nagi's ramen). In Taipei, there is one more option for those Taiwanese that are afraid of salt: Taiwan Limited, just like the Moderate option but with less salt. Then you add one of three options for seasoning, which can be seen in the picture of their menu that I posted below in the picture section. Any option comes to a total of NT$250. If you want a large portion of noodles, it will cost you an additional NT$30. I can eat a lot and I thought the normal amount of noodles was definitely sufficient. Then you choose between two different types of noodles. A ramen bowl comes with one slice of pork, a half of a Japanese-style egg (soy sauce flavored partially-boiled egg), spring onions, and deep-fried shrimp shells that make a very nice crunchy addition to the overall composition of the dish. If you want more than the normal one pork slice, you can pay an additional NT$60 for three more slices, giving you a total of four pork slices -- so you can get one or four slices, nothing in between. You may also pay a cost of NT$30 for an additional whole Japanese-style egg.
The shrimp broth is what makes Ebisoba unique from other ramen restaurants. It's also the reason why I highly recommend that you order the Original (solely shrimp broth) when you visit Ebisoba. Even though I liked Ebisoba's mixed pork bone and shrimp broth options, I felt that the pork bone took away from the powerful shrimp taste -- no surprise; that's what happens when you mix broths. Personally, I think other ramen restaurants' pork broths are better than Ebisoba's, so again, I encourage you to order their Original. After having tried different broth options in order to gather enough information for this review, I will now always order Ebisoba's Original on all my future visits. I should also express that I'm not a big shrimp fan, but still thought their ramen was delicious; there are other elements in their Original broth other than shrimp, and they all combine to make a unique and very satisfying ramen experience.
Vegetarian options: None, pork and seafood is in the broth, and the other options besides ramen include meat or meat juice as well.
