Baikohken 梅光軒 is a Japanese chain ramen shop that expanded it's locations outside of Japan to Taiwan, Hong Kong, and Singapore (as of this review). They serve Asahikawa-style ramen with chijire noodles (wavy noodles) in a pork and seafood stock broth. Their pork is hammer-cut, thicker than other shops' pork slices. In the spicy bowl the pork is cut into cubes. Like other Japanese ramen shops, they offer a small amount of items to choose from in order to specialize in each one. Other items that may be ordered on the side: Japanese-style fried chicken, pot stickers, barbecued pork rice bowl, Japanese-style hard-boiled eggs, edamame, and deep-fried potato or crab.
Baikohken has three signature broths: miso butter, soy sauce, and salt. Their ramen has won awards in Japan; the most notable recognition would be winning the grand prize at a Hokkaido award ceremony and topping the 2012 Michelin Red Guide. Their broth is on the lighter side compared to heavy-tasting broth shops such as Nagi, making it ideal for people who prefer ramen broth that's a bit lighter in taste and not overpowering. Their signature broths can be made spicy by ordering the spicy bowl, and more meat ramen bowls can also be purchased.
